My version is zucchini, mushrooms, onion, cherry tomatoes, and garlic quickly sautéed and then topped with freshly grated parm. I'm with you that cooking is very relaxing.
I wish I liked to cook just a fraction as much you (or Elizabeth) do. But, as you know, I don't. That said, I will have to make this! It looks manageable for me and also very comforting in these dire times.
